Tropical Sun Scotch Bonnet Sauce: very tasty

This is a traditional West Indian pepper sauce, made with lots of pepper, brewed vinegar, a small amount of sugar and some maize starch as thickener. Unfortunately there is some potassium sorbate as preservative, but by all accounts it is harmless.

Put simply this stuff rocks. It is hot by West Indian sauce standards, but not mad hot, and the flavour is absolutely gorgeous.

And the good news is you can get it from supermarkets at a modest price, about £1.50, and I think I bought mine from Waitrose.

After getting through a bottle a week for many weeks, I've realised that this sauce gives me chronic wind. :oops:

I wonder if it is the potassium sorbate?
